The Gastronomy and Culinary Arts Department of the Faculty of Tourism added another sectoral collaboration to its portfolio by holding a comprehensive training program with Pirge, one of Turkey’s leading professional knife brands. This special training, attended by 1st-year students of the Gastronomy and Culinary Arts Department, was delivered by expert instructors in the field. The program was moderated by Prof. Dr. Ümit Sormaz, a member of the department's academic staff.
Within the scope of the event, students acquired detailed knowledge on the usage areas of different knife types, proper knife grip, basic and advanced cutting techniques, knife sharpening and maintenance methods, and the importance of knife safety in the kitchen. The training took place in an interactive format, including theoretical presentations as well as hands-on practical work directly involving the students. Thus, future chef candidates had the opportunity to experience firsthand how to use the knives utilized in professional kitchens correctly and safely.
Moderator Prof. Dr. Ümit Sormaz emphasized that mastery of equipment is an indispensable element in gastronomy education during his opening speech for the event, stating: “Gastronomy education is not just about learning cooking techniques. It is of great importance for our students to use kitchen equipment consciously and skillfully to prepare them for the challenges they will face in professional life. Such collaborations with leading sector companies like Pirge strengthen the professional competence of our students.”
Pirge instructors also provided information about the company's production approach and quality standards, developed in line with over 100 years of experience, and conveyed that the correct use of knives directly affects kitchen efficiency, hygiene, and safety. Throughout the training, students learned the intricacies of professional knives while developing their skills through practical applications using materials provided by the brand.
